Description

This Grand Cru Blanc de Blancs is named for the goddess of wisdom and is the culmination of everything Waris Hubert have learned about fermenting and ageing wines in Burgundian barrels with naturally occurring yeast. 

The grapes are sourced from a single, 90-year-old plot in Avize named Clos des Maladries and aged in large, 600l barrels, resulting in a more vinous texture for a Champagne. The 2016 vintage boasted a hot summer, allowing the Chardonnay grapes to express the full gamut of flavours in this cuvée, including rich, golden orchard fruits, tropical mango and yellow peach. The mousse is dense, the flavours are concentrated, and the structure is still quite tight, with the finish retaining a fresh minerality.

I would drink this from 2024 until 2038.

They are unquestionably the finest dry white wines in the world. Chardonnay plays a crucial role in the Champagne blend, providing structure and finesse, and is the sole grape in Blanc de Blancs.

Champagne Waris Hubert

An independent family business, Champagne Waris Hubert is run by Olivier Waris, his wife Stephanie, and their three children. The family have a long history of farming in the area, but only started making Champagne in 1998. Now, they hold 18 hectares that are all in organic conversion and will achieve certification in 2023.
