The 2014 Pavie is clearly the star of Grard Perse's portfolio this year. The aromatics are the most complex and absorbing, a mixture of red and black fruit, graphite and black truffle, a faint marine influence emerging as it unfolds in the glass. The palate is medium-bodied and demonstrates less substance and glossiness than the Bellevue-Mondotte. In fact, if you had this blind you might describe it as a more classic Saint Emilion, underpinned by quite firm tannin that provide this with impressive backbone. There is a toughness to this Pavie, but it retains balance. It has its sights set on longevity and for that we will have to wait, but it will be worth it.Neil Martin - 31/03/2017

Nose needs to be coaxed out of the glass. Thick and much more athletic than the other wines. You can really see the terroir here. Lively proper freshness as well as great intensity and ambition. There is a perceptible difference between this and the other Perse wines that seem to have too much make-up. Long and tense and not too much sweetness. Still a bit dry on the end. 60% Merlot, 22% Cabernet Franc, 18% Cabernet Sauvignon. More to the British taste with all that Cabernet (a record for the Cabernet Sauvignon). Long and linear with plenty of freshness. Firmly structured but a touch more finesse than in the past. Saline note on the finish.

Merlot

The most widely planted grape in Bordeaux and a grape that has been on a relentless expansion drive throughout the world in the last decade. Merlot is adaptable to most soils and is relatively simple to cultivate. It is a vigorous naturally high yielding grape that requires savage pruning - over-cropped Merlot-based wines are dilute and bland. It is also vital to pick at optimum ripeness as Merlot can quickly lose its varietal characteristics if harvested overripe.
