Description
Butteaux is a subsection of Montmain and this wine is fine and clear in colour with a rich and exciting nose, including some bacon fat. It displays a bounding energy, some grassiness, not too fleshy, yet with great concentration and length. Very promising.

Picking began on Wednesday 2nd October for Les Butteaux and finished on the 8th. The crop was down overall by 35%, especially in village and Grand Cru. The wines underwent a long, slow fermentation without any lees stirring. Though we have long been admirers of this domaine, this is the first appearance for Louis Michel in our Grand Burgundy Offer.off without problem during vinification and in the cellar.

Chardonnay
Chardonnay is often seen as the king of white wine grapes and one of the most widely planted in the world It is suited to a wide variety of soils, though it excels in soils with a high limestone content as found in Champagne, Chablis, and the Côte D`Or. Burgundy is Chardonnay's spiritual home and the best White Burgundies are dry, rich, honeyed wines with marvellous poise, elegance and balance. Domaine Louis Michel
Prior to 1970 all the wines from this domaine were fermented and matured in old oak barrels. By 1980 the old oak had been thrown out and the domaine had switched entirely to stainless steel. Today the domaine is run by Jean-Loup Michel and is widely recognised as the prime exponents of unoaked Chablis in the region.
