Description
Guillaume’s largest Grand Cru holding, at one hectare, this parcel lies on the north-facing slope of the vineyard, so tends to ripen late and retain high acidity, but its clay soils contribute weight and texture. The palate is more open than the nose at present, with a slight viscosity and textural feel, rather than any overt fruit character. It is somewhat shy and reserved now, but there is undoubted potential. Drink 2022-2030.

Chardonnay
Chardonnay is often seen as the king of white wine grapes and one of the most widely planted in the world It is suited to a wide variety of soils, though it excels in soils with a high limestone content as found in Champagne, Chablis, and the Côte D`Or. Burgundy is Chardonnay's spiritual home and the best White Burgundies are dry, rich, honeyed wines with marvellous poise, elegance and balance. They are unquestionably the finest dry white wines in the world. Chardonnay plays a crucial role in the Champagne blend, providing structure and finesse, and is the sole grape in Blanc de Blancs.
Domaine Louis Michel
Prior to 1970 all the wines from this domaine were fermented and matured in old oak barrels. By 1980 the old oak had been thrown out and the domaine had switched entirely to stainless steel. Today the domaine is run by Jean-Loup Michel and is widely recognised as the prime exponents of unoaked Chablis in the region.
