Description
This is Delphine’s top wine – at once her driest cuvée (at only 2g dosage) and oldest (old vines barely gives it justice, as these were planted in 1957 by her grandfather), so full of history and the culmination of decades of winemaking in the Cazals family. The 2014 vintage is very overlooked – this was a sunny vintage, which you can taste in the richness of fruit and quality of the finish.
The vineyard is only 1ha and is looked after meticulously – Delphine and her team visit every morning leading up to harvest, and frequently throughout the year, to monitor the ancient Chardonnay vines. Fermented in stainless steel but aged for 1 year in old Burgundy barrels, this is a textured and complicated champagne with a depth and tension only achieved from this specific terroir. This is still young and will reward cellar ageing, especially from magnum.
